Not so boring Pasta Salad
A salad doesn’t just have to be lettuce, tomatoes and cucumber. You can add lots of other foods to make it into a full dinner. In this recipe we add some more vegetables and a carbohydrate. If you want it to be a complete meal you could add some cheese, chicken, ham or egg.
Ingredients​

1/2 cucumber

3 tomatoes or 8 cherry tomatoes

Half pepper

1/2 small tin of sweet corn

150g dry pasta
-
3 tbsp mayonnaise

1.5 tbsp white vinegar or white wine vinegar

3 tbsp of water

What do we need?

Saucepan
-
Chopping board
-
Knife
-
Large mixing bowl
-
Small mixing bowl
-
Whisk or fork
-
Peeler
What do we do?

Put the pasta into the saucepan and add enough water to cover it. Put it onto boil – it should take 12-15 minutes

Use the peeler to peel ribbons of the cucumber when you get towards the middle and see the seeds stop. We do not want the seeds in our salad as it will make it too watery

Take the cucumber of ribbons and cut them into smaller strips (around 2cm long)

Cut each tomato into eight pieces. The easiest way is to cut it into quarters and in half again

Open the tin of sweet corn and drain the water away.

When the pasta is cooked drain the remaining water away and rinse the pasta with cold water to cool down the pasta and stop it cooking any further

Put all of the vegetables and the pasta into a bowl

Put the mayonnaise into the small mixing bowl and use the fork to whisk in the vinegar and water. The sauce will split and be runny but if you keep whisking it should come back together into a thick sauce

Add the sauce to the pasta and vegetables and stir well
