Baked Doughnuts

Oh my word these are so good! And as they are baked not fried they are good for you, right??? I bought some silicone doughnut pans, but you could cook them in a cupcake pan

Ingredients to make 12

240g/ 8.5oz Self Raising Flour

150g/ 5oz Granulated Sugar

2 Tsp Baking Powder

1Tsp Salt

50g/ 2oz Butter, melted

2 eggs

200ml Milk

2 Tsp Vanilla Extract

 

Toppings

175g/ 6oz Icing Sugar

1 Tsp Vanilla Extract

A pinch of salt

1-2 Tbsp Milk

Food colouring and sprinkles are optional

What do we need?

  • Two mixing bowls

  • Measuring jug

  • Hand whisk

  • Tablespoon

  • Teaspoon

  • Doughnut Pan if you have one or Cupcake Tin

  • Small Bowl

When you remove from the oven check they are cooked by pressing the top of each doughnut, they should bounce back

What do we do?

  • Turn the oven onto 175C/ 350F

  • Spray the doughnut or cupcake pan with oil and set to one side. If you don’t have oil spray put a little oil on a piece of kitchen roll and rub round the cake/ doughnut pan

  • Put the flour, granulated sugar, baking powder and salt into one of the mixing bowls

  • Measure out the milk into the second mixing bowl add the melted butter, eggs and vanilla extract. Whisk well to combine.

  • Add the milk mixture to the dry ingredients and whisk until it is all mixed together. Don’t mix it too much.

  • Spoon the mixture into the doughnut pan or cupcake tin. Alternatively, you can pop it in a piping bag to help you. You want to fill them up to ¾ full.

  • Put the doughnuts in the oven and cook for 8-10 minutes

  • While the doughnuts are cooking put the icing sugar, pinch of salt and vanilla extract into a mixing bowl whisk in a little of the milk at a time until it is a thick but runny icing.

  • At this stage you can separate and colour the icing if you would like. 

  • When the doughnuts are still warm, dip them into the icing and add sprinkles if using.
