Apple Crumble and Custard

This recipe was requested by one of the children who comes to my after-school club. Apple crumble is super easy to make and once you see how easy it is to make your own custard you won’t buy it again.

Tia's tip

You can take out 2oz of flour and replace with porridge oats - it is yummy!

Ingredients​

For the Crumble

  • 3 cooking apples or 6 eating apples

  • 2oz Brown Sugar

  • 1 Tsp Cinnamon 

  • 8oz/ 250g Plain Flour

  • 5oz/ 150g Butter

  • 2oz/50g Granulated Sugar

 

For the Custard

  • 1 pint of Milk

  • 2 Tsp Cornflour

  • 2 Tbsp Caster Sugar

  • 3 Egg Yolks

  • 1 Tsp Vanilla Essence

What do we need?

  • Large mixing bowl

  • Weighing scales

  • Ceramic oven dish

  • Sharp knife 

  • Peeler

 

 

 

  • Measuring Jug

  • Tablespoon

  • Teaspoon

  • Whisk

  • Large Mixing bowl

  • Saucepan

What do we do?

                     

  • Pre-heat the oven to 180C/ Gas Mark 5-6

  • Peel and core the apples and slice them thinly

  • Place them in the oven dish

  • Sprinkle over the brown sugar and the cinnamon

  • Weigh the Flour and Granulated Sugar and put in the large mixing bowl

  • Add the butter and rub it in using your fingertips until it has a breadcrumb texture (This is the Crumble Mix)

  • Sprinkle the crumble mix over the apples

  • Put the crumble in the oven and cook for 35- 40 minutes

 

For the custard

  • Separate the eggs and put the yolks in the large mixing bowl (needs to be heatproof)

  • Put the egg whites to one side to use later

  • Add the caster sugar, cornflour and vanilla to the yolks and whisk well

  • Warm the milk in the saucepan

  • When the milk is nearly at boiling point, add to the egg yolks and sugar in the large bowl and whisk constantly

  • Pour the custard mixture back into the saucepan and return to the heat

  • Whisk over a low heat until thickened

  • Serve with the crumble and enjoy
